Crunchy vegan granola bars with seeds & hazelnuts

Crunchy, chewy, and 100% plant-based, these nutty granola bars are the perfect gut-friendly, on-the-go snack. Rich in fiber, protein, and healthy fats, they provide lasting energy that both kids and adults will love.

Ingredients

  • ¾ cup porridge oats
  • ¾ cup jumbo oats
  • ¾ cup raisins
  • ⅔ cup hazelnuts, roughly chopped
  • ⅓ cup pumpkin seeds
  • ⅓ cup sunflower seeds
  • 2 tsp ground cinnamon
  • ¼ cup ground chia seeds
  • 2 tbsp peanut butter
  • 6 Medjool dates, pitted
  • ½ cup maple syrup

Preparation steps

Step 1

Mix the ingredients

Preheat the oven to 200°C (180°C fan-assisted). In a large mixing bowl, combine the oats, raisins, hazelnuts, pumpkin seeds, sunflower seeds, cinnamon, and ground chia seeds.

Step 2

Blend and mix

In a food processor, blend the peanut butter, dates, and maple syrup until smooth. Pour this wet mixture over the dry ingredients and mix well until everything is evenly coated and sticky.

Step 3

Spread the mixture

Transfer the mixture to the baking tray and press it down firmly to form a compact layer. Bake for 25 minutes, until the top is nicely golden.

Step 4

Let cool and cut

Let the mixture cool completely before cutting into 12 bars (or more, depending on the size of the tray and the quantities used). Enjoy!
