Apple & Banana Muffins (Refined Sugar-Free & Gut-Friendly)

These wholesome banana apple muffins are perfect for health-conscious parents looking for easy, nourishing snacks. They’re dairy-free, free from refined sugar, and naturally fibre-rich, thanks to fruit and spelt flour,  an ancient grain prized for its gentle effect on digestion. Spelt is higher in fibre than regular wheat and easier to digest, making it ideal for little tummies. It also offers a subtle nutty flavour and is packed with essential nutrients like iron, magnesium, and B vitamins, a smart swap for more processed flours.

Combined with potassium-rich bananas, prebiotic-rich apples, and warming cinnamon, these muffins support gut health while tasting like a treat. Great for lunchboxes, breakfast, or after-school snacks (and loved by kids and grown-ups alike)
Muffins à la pomme et à la banane (sans sucre raffiné et gut-friendly*)

Ingredients:

  • 2 ripe bananas, mashed
  • 1 apple, grated (leave skin on for more fibre)
  • 2 eggs
  • 60ml olive oil or melted coconut oil
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon vanilla extract
  • 150g spelt flour
  • 1 teaspoon baking powder
  • ½ teaspoon bicarbonate of soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Optional:

  • a handful of chopped walnuts or seeds for added crunch and healthy fats

Step 1

Preheat the oven

Preheat the oven to 180°C (fan) and line a muffin tin with 10–12 paper cases.

Step 2

Mix the ingredients

In a large bowl, whisk together the mashed bananas, grated apple, eggs, oil, maple syrup, and vanilla until well combined. In a separate bowl, mix the spelt flour, baking powder, bicarbonate of soda, cinnamon, and salt.

Step 3

Divide the batter

Fold the dry ingredients into the wet mixture until just combined, don’t overmix. Divide the batter evenly between the muffin cases. If using, sprinkle a few walnuts or seeds on top.

Step 4

Put in the oven

Bake for 18–22 minutes, or until a skewer comes out clean and the tops are golden and firm.

Enjoy!

Allow to cool slightly before eating (though they’re glorious warm from the oven too).
